AAA Chicken Salad with Raspberry VinaigretteBy Ghee Whizz
In the heat of the summer, sometimes you want something for supper that’s fast, fresh, crispy and cool. What’s the triple-A in AAA Chicken Salad with Raspberry Dressing? Almonds, avocados and apples. With a sprightly raspberry vinaigrette to bring it together. Start with a rotisserie or leftover roast chicken and you’ll be out of the kitchen in a trice!
The raspberry vinegar I like is from Alessi, and I get it a Whole Foods. I’ve seen this vinegar in other stores, too. Harris is growing some super produce right now, and this lettuce is a real winner. It’s a variation on iceberg with a loose, open head and it’s delicious. And being able to “shop” in the yard is such a treat. Some lettuce varieties, particularly Romaine, don’t take kindly to the heat and humidity of South Louisiana, but this variety is lovely and fresh.
