Gluten Free/Dairy Free Chocolate Cake DonutsBy Alison Howard of Savoring Presence
Here is my dilemma, cake at birthday parties when my daughter is dairy intolerant and I am gluten intolerant. I always make some treat for Helena to have while the other children enjoy cake. Can you imagine her sitting there with nothing? It’s too much for my heart to handle so I just whip something together and in a pinch, I have a go to favorite go-to boxed chocolate cake mix. It’s by Simple Mills. You can read each of the simple ingredients clearly on the box and you will know what they are.
I made the chocolate cake batter per the recipe on the box and filled my donut baking pan with the batter about ½ full in each. Thankfully I did consider how thin the donut rings are and reduced the cooking time to 12 minutes. They were perfect at this temperature. After the donuts were cooled I coated the middle of the donut sandwich with a chocolate glaze and topped 2 with roasted pecans for Tim and I and one with sprinkles for Helena. The donuts were a hit at the party, too pretty and good not to share and to give a high-five to Simple Mills for a boxed product that’s really good!
